Separate transport models and colocate tests

Refactor transport/profile modeling and test ownership to make module boundaries clearer without changing runtime behavior.

• Transport model: Extracted device metadata and typed profile families into transport_model.rs, removing the pipewire ↔ transport dependency cycle.
• Test organization: Moved CLI and network tests to their implementation modules, and interval validation coverage to runtime_config.
