docs(documents): remove feature flag setup from Documents and deep research - #1537

Lightdash removed the documents and ai-deep-research flags (lightdash/lightdash#31413). Self-hosted versions 3.31.0 and earlier still need documents in LIGHTDASH_ENABLE_FEATURE_FLAGS. Co-Authored-By: Claude Opus 5.5 <noreply@anthropic.com>
