chore: drop the stale packaging/flatpak manifest - #161

Conversation
The manifest in packaging/flatpak still pinned commit 1b26723 (before v0.3.16) and never installed the symbolic app icon that v0.3.20 ships, so it no longer matched what Flathub builds. Keeping a second copy that has to be bumped by hand only produces drift. Flathub (flathub/io.github.gnacho.Scribe) is now the single source of truth for the published manifest. build-aux/flatpak/ stays as the local-checkout build, and its cargo-sources.json becomes a real file instead of a symlink into the removed directory, so flatpak-builder keeps working from a clone. packaging/flatpak, the JSON still parses (209 modules) and the 8 file paths the local manifest installs all exist in the tree.
