To catch SDK 27 compatibility issues early alongside our existing Xcode 26 coverage, we need CI visibility against Xcode 27.
This PR adds Xcode
27.1(xcode-27runner) to all product workflow matrices withcontinue-on-error: ${{ matrix.xcode == '27.1' }}so Xcode 27 builds and simulator tests run non-blockingly while beta runner/SDK issues stabilize.
