- Upgrade to latest Zalando Operator v2.0.1
- fix manifest building

- update Go to 1.26 - update Zalando Postgres Operator module to v2 - uses a pseudoversion and we still reference the v1 api by path because zalando/postgres-operator#3156 is not yet merged
there was a patch applied to the manifest that was maintained by hand. Patches are now applied automatically
