OSRM refuses to load .osrm files prepared by a different version than the
linked library ("File is incompatible with this version of OSRM"). Allow
overriding the downloaded osrm-backend ref (tag/branch/commit) so users can
build against the version that produced their data. Defaults to v6.0.0.
