fix(ci): the first runs on GitHub's Windows, macOS and image runners - #5

- test repositories take paths NTFS cannot hold (Git for Windows refused a tab and a quote in fast-import) and run no background gc (on macOS receive-pack's gc still wrote while a test removed its directory) - image checks capture docker's output before grep -q: under pipefail the early exit broke docker's pipe and failed the step - a timed fuzz run that ends with "context deadline exceeded" and no failing input is a warning

The first CI run on master failed on Windows (fast-import refused NTFS-invalid fixture paths), macOS (receive-pack's background gc raced the test's cleanup), the image checks (
grep -qunder pipefail broke docker's pipe: exit 255) and once in fuzz ("context deadline exceeded" with no failing input). Test fixtures, workflows and one e2e helper only; no engine change.
