ci: take the docs workflow back from the hub - #53

This repository's docs.yml had improvements of its own (workflow_dispatch, a concurrency group, --no-dev --group docs on uv run), which made it this repository's file. The hub's zensical-docs pack now has all of them, plus uv sync --locked, so the file takes the hub's version and gets its updates again.
