[DOCUMENTATION/Wiki] How to configure ccls [with gcc]?

Is there a way to configure ccls to use GCC, specifically riscv32-unknown-elf-gcc as I need inline assembly checks?
If there is one, then the documentation is rather lagging behind.

I currently have 3 different GCC compilers on my PC:

• /usr/sbin/gcc which is for native (x86_64) compilations (it is 15.2.1 20260103)
• /usr/sbin/riscv32-unknown-elf-gcc for cross compilation for RISC-V RV32 (it is (g5115c7e44) 15.2.0)
• /usr/sbin/riscv64-unknown-elf-gcc for cross compilation for RISC-V RV64 (it is (g5115c7e44) 15.2.0)

How do I tell ccls which one to use on a per-project basis?
I use inline assembly language and being able to properly select compiler is important.
